Egg Cups

Super Easy Healthy Breakfast, Lunch or Snack Option! 

Makes 12 egg cups 

Ingredients: 

  • 2 cooked medium sausages 
  • 1 yellow bell pepper 
  • 1 cup of shredded cheddar cheese 
  • 10 medium-large free-range eggs 

Directions: 

  1. Preheat oven to 350°F.
  2. Line muffin tin with silicone cups or grease (using your oil of choice) the bottoms and sides.
  3. Dice the sausage and pepper into small pieces. 
  4. Divide into 12 portions and place in the bottom of each muffin tin. 
  5. Next, sprinkle the shredded cheese on top. 
  6. Whisk the eggs in a medium size bowl and then using a ¼ cup, evenly pour egg mixture over the cheese.
  7. Bake until the eggs are set, about 30 minutes.

These are great cooked ahead and can be stored in the fridge for several days.  You can also substitute the pepper and sausage for your protein or vegetable of choice.  Just reheat and enjoy!
