Spicy Beef for Tacos

Great on lettuce wraps or homemade tortillas!

Serves 4-5 people

Ingredients:

  • 1 to 1-1/2 lbs stewing beef
  • 1 leek when in season; sliced finely using both green and white parts (use extra onion if not)
  • 1 small onion diced
  • 1 green pepper diced
  • 2 garlic cloves minced
  • 1 cup water
  • 1 can black beans
  • Taco Seasoning: 1 Tbsp chili powder, 1 tsp cumin, 1 tsp onion powder, 2 tsp paprika, 1 tsp oregano, 1/4-1/2 tsp chili pepper flakes
  • Salt and ground pepper to taste

Directions:

  1. Add stewing meat to slow cooker and set it to low.
  2. Add leeks and/or onions along with the green peppers, directly on top of beef.
  3. Sprinkle with taco seasoning and cover with water.
  4. Cook on low for 6 hours.
  5. Stir the beef mixture and add the black beans.
  6. Continue cooking for 1 more hour.
  7. Remove from slow cooker, shred with two forks and use immediately or return to slow cooker to keep warm.

Serve on top of lettuce leaves and add your favourite taco toppings. My favourite go-to is Tangy Lime Cole Slaw with a little bit of organic no sugar added salsa. This is a hit with our family!
