Tangy Lime Cole Slaw

Great on tacos or on its own!

4-6 servings

Ingredients:

Cole Slaw:

  • 3-4 cups shredded cabbage (red or white)
  • 1 carrot shredded
  • 1 jalapeño 1/2 chopped finely and 1/2 sliced for garnish

Dressing:

  • 1/4 cup olive oil
  • I Tbsp rice wine vinegar
  • Juice of 1 small lime
  • 1 Tbsp of honey
  • Freshly ground pepper and salt to taste

Directions:

  1. Combine shredded cabbage and carrot along with diced jalapeño in serving bowl.
  2. Dressing: Whisk together olive oil, rice vinegar, lime juice, honey and salt pepper in a small bowl.
  3. Pour dressing over slaw and stir.
  4. Garnish with jalapeño slices.

While you can eat it right away, it’s best made ahead to let the cabbage saturate the dressing.
