
Great on tacos or on its own!
4-6 servings
Ingredients:
Cole Slaw:
- 3-4 cups shredded cabbage (red or white)
- 1 carrot shredded
- 1 jalapeño 1/2 chopped finely and 1/2 sliced for garnish
Dressing:
- 1/4 cup olive oil
- I Tbsp rice wine vinegar
- Juice of 1 small lime
- 1 Tbsp of honey
- Freshly ground pepper and salt to taste
Directions:
- Combine shredded cabbage and carrot along with diced jalapeño in serving bowl.
- Dressing: Whisk together olive oil, rice vinegar, lime juice, honey and salt pepper in a small bowl.
- Pour dressing over slaw and stir.
- Garnish with jalapeño slices.
While you can eat it right away, it’s best made ahead to let the cabbage saturate the dressing.
